What's in a Name?

When you come to visit our tasting room, our name is where you are -- the longitude, 117° West or more specifically, 33.153222° N and 117.2920358° W.

In addition to the obvious geographic reference we also aim to produce West Coast inspired spirits and our still was built in Coleville, WA on the same longitude just a little farther north.  

What is a West Coast Spirit you might ask?  Honestly, at this point it is up for debate but our interpretation is one that focuses on the elements of high quality regional ingredients, bold flavors and new ideas.  An example is our gin.  This product takes a traditional recipe for the precursor to Gin known as Genever* and reinvents it with a West Coast twist.  While maintaining the predominant flavor of juniper among our botanicals along with more traditional ingredients like coriander, orris root, angelica root and others, we add West Coast inspired ingredients like White Sage, Hibiscus, citrus peel and Citra hops. 

*Genever was invented in Holland in the 1600s.  It was made from a base of malted grain (barley, wheat, rye) and possibly corn.  The name derives from Dutch for juniper.  In addition, the botanicals were infused using a Carter Head or Gin Basket that is placed between the column and condenser yielding a smoother, softer spirit due to the ethanol vapor extraction as opposed to the later more bitter London Dry Gins.
