Here at 117° West Spirits we aspire to produce high quality west coast-inspired spirits that reflect the innovative nature and laid back mentality of our native state - California.
With nearly two decades of homebrewing experience and a doctorate in chemistry from UC San Diego, our head distiller Justin McCabe has chosen to weave these two passions together to reinterpret traditional spirit recipes. The distillery's workhorse is an Alexandria Still manufactured by Henry Anderson of Gatling Stillworks and designed by Mike Boyich of DLM labs in Ontario, Canada.
Ultimately we plan to offer a lineup of flavorful spirits inspired by the bounty of the west coast and our love for craft. From citrusy hopped rum and gin to alternative style west coast whiskey, there will be no taste bud left untouched.

117 West White Rum is fermented from 100% sugar cane with Champagne yeast making for a very light and smooth spirit. It does not contain molasses like many other rum recipes and is therefore more similar to Brazilian Rum or Cachaca. Makes a great Daiquiri or Mojito and is used as the base for our spiced and aged rums.
117 West Spiced Rum uses our white rum base and is infused with all fresh ingredients including orange and lemon zest along with spices that include whole Madagascar Vanilla beans, cloves, allspice, nutmeg, ginger and cacao nibs.
117 West Gin is a traditional style Genever with a West Coast twist. Genever is the original gin from Holland produced beginning in the 1600s. This traditional style is pot-distilled from malted grain (barley, wheat and rye). The fresh West Coast twist is the addition of hops along with hibiscus, white sage and cacao nibs. Tastes delicious in a Negroni or Tom Collins, also pairs well with ginger in a Gin Buck or makes an amazing Gin ‘n Tonic. Our distiller likes it neat.
Distilled from malted rye, barley and chocolate rye and aged for less than a year in small, charred new American oak barrels, this spirit is youthful and vibrant in flavor. The spice of the rye malt along with chocolate notes are not lost due to the short aging period but there is plenty of oak character to back them up. Enjoy neat for the full effect or in a delicious Manhattan.
Distilled from 100% malted barley including crystal, chocolate and roasted barley and aged in small, charred American oak casks, this whiskey is smooth, complex and intriguing. The elements of inspiration from stout beer with chocolate, toast and roast compliment the caramel and vanilla notes from the oak aging. Enjoy neat or in a truly delicious old-fashioned.
Distilled from corn, rye and Vienna malt and aged for less than a year in small, charred new American oak barrels, this bourbon is influenced by tradition and innovation. High rye bourbon along with German-style malt combine to yield a more grain-forward flavor in this fledgling spirit.
